History of Pistachio
The original homelands of the pistachio were Asia Minor Iran, Syria, Lebanon and a bit north to the Caucasus in southern Russia and Afghanistan.
Archeologists have found evidence in a dig site at Jerome, near northeastern Iraq, that pistachio nuts were a common food as early as 6750 BCE. Then, for unknown reasons, these nuts fell into obscurity until 2000 BCE when the Near East sprouted in population and less common foods such as pistachios were rediscovered and even cultivated. The hanging gardens of Babylon were said to have contained pistachio trees during the reign of King Merodach-baladan about 700 BCE.

KALEH GHOCHI PISTACHIO:
This nut is famous for being large. It is sensitive to shortage of water and its leaves are complex. This type of nut is vulnerable to cold weather in spring. It can be harvested in mid September.
On the whole Kalleh Ghouchi is not being budded anymore and production is from existing trees. Although commercially quite successful, Kalleh Ghouchi trees showed a steep drop in growth and production as they grew older than 40 years old. It is expected that the production would slowly decline.
Available sizes are 20/22, 22/24 and 24/26, with 18/20 being available in small quantities.
FANDOGHI PISTACHIO :
Fandoghi Pistachio is smaller than other kinds of pistachio and larger than hazelnut. Because of its small size, the number of Round pistachios in one kilogram is more than other types therefore it is more economical and has the largest volume for export. Round pistachios are great in protein and nutritional value. Pistachios are a great source of healthy fats, fiber, protein, antioxidants and various nutrients, including vitamin B6 and potassium. Fandoghi pistachio is smaller in shape and appearance compared with other types of pistachios. It is more economical in price and has the largest volume for export. AHMAD AGHAEI PISTACHIO:
This nut is rather large and its fruit is almond shaped. It can be harvested in late September. The newest commercial variety, very popular with the farmers, because of high yield and its shorter time to reach production. It is very popular in some markets like India and Greece. Production of this variety is increasing. It also has the whitest shell hue among the four.

AKBARI PISTACHIO:
This type is the highest economic value. Its fruits are large and almond shaped. It can be harvested in late September. This is a newer variety with good yield and with long, large nuts.

KERNEL PISTACHIO:
The KERNEL PISTACHIO is the edible part of Pistachio and is used as a fruitful, nutritious and valuable food. This type of Pistachio Kernel is really effective for strengthening the body and immune system.
GREEN KERNEL PISTACHIO:
The Green kernel pistachio has particular consumption for confectionary purposes having same quality of Kernel Pistachio, but with higher value than the other types. This type of pistachio kernel is normally produced through harvesting pistachios when they are still raw (Kaal). These types of pistachio kernels are normally more expensive than other type of pistachios, due to costly process. As the color of kernels are greener the price of pistachios kernels is higher too. Iranian Green Kernels are known as luxury food ingredient, which are used in various industries such as: pastries, chocolate, ice cream, sausages and ham.
